Xanthan gum can help to bind gluten free bread and baked goods. If it is not already included in your flour blen, mix 2 teaspoons of xanthan gum with 500g of plain flour for bread, 1/4tsp to 200g plain flour for cakes and a pinch per 100g plain flour for pastry.
