Spelt is an ancient grain, from the same family as wheat and is often used as a wheat alternative in numerous recipes. 

Although spelt does contain gluten, it seems to cause fewer sensitivities in some people who are intolerant of wheat.

Spelt can be eaten whole in salad, and it commonly used to make spelt bread.
