With the cold nights drawing in, this recipe is sure to sweeten you up! 

You will find the majority of the ingredients in our vegbox this week.

2 Sweet Potatoes

100g Sugarsnap Peas

1 bunch of chives

25g Flaked Almonds

1 Packet of Feta Cheese

Ground Black Pepper 


Start by preheating your oven to gas mark 6 then place the sweet potatoes on a sheet of greaseproof paper on a baking tray, prick each potato with a fork in two or three places. Bake for about 1 hour or until tender.

In the meantime de-shell the sugarsnap peas and chop up the chives.

Allow the potatoes to cool and then cut them in half lengthwise and scoop out the insides of the potato into a bowl.

Add the feta, peas and chives to the potato and mix well, spoon the mixture into each half and then sprinkle with almonds.

Add black pepper to taste and violà
